Fresh Strawberry Milkshake

Frozen berries bring real strawberry flavor and keep the shake cold, but too many create an icy smoothie. One cup against three cups of vanilla ice cream is the balance. Macerating the berries briefly with sugar pulls out enough juice for an even blend.

Ingredients
  

  • 1 cup frozen strawberries halved
  • 1 tbsp granulated sugar
  • 3 cups firm vanilla ice cream
  • 1/2 cup whole milk
  • 1 tsp fresh lemon juice

Method
 

  1. Toss the frozen strawberries with the sugar and let them stand for 5 minutes until their surfaces look glossy.
  2. Chill two tall glasses in the freezer while the berries stand.
  3. Add the milk, lemon juice, strawberries and ice cream to a blender in that order.
  4. Pulse 6 times, then blend for 20 seconds until pale pink with tiny berry flecks and no hard fruit pieces.
  5. Pour into the cold glasses and serve immediately.
