French Dip Roast Beef Sliders

These keep the jus outside the sandwich where it belongs. Warm thin roast beef in a clean broth, drain it briefly and add provolone to toasted rolls. The small dipping cups turn two sliders into a proper meal.

Ingredients
  

  • 1 1/2 lbs thinly sliced cooked roast beef
  • 3 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 8 slices provolone cheese
  • 8 crusty slider rolls split

Method
 

  1. Bring the broth, Worcestershire and thyme to a gentle simmer for 5 minutes.
  2. Add the roast beef and warm it for 2 to 3 minutes until it reaches 165°F without boiling.
  3. Toast the rolls cut-side up for 2 minutes.
  4. Drain the beef briefly and divide it among the roll bottoms.
  5. Add provolone and broil for 1 minute until softened.
  6. Close the sliders and serve with eight small cups of strained jus.
