Freezer Ham Egg Swiss Croissants

Croissants freeze better when they are fresh but not warm. A firm baked egg square and folded ham keep the filling even from edge to edge. Thaw overnight for the flakiest result, though the microwave route still beats leaving hungry.

Ingredients
  

  • 9 large eggs
  • 1/2 cup whole milk
  • 3/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 12 oz thinly sliced deli ham
  • 6 slices Swiss cheese
  • 6 large croissants split

Method
 

  1. Whisk the eggs, milk, salt and black pepper and pour them into a greased 9-by-13-inch pan.
  2. Bake at 350°F for 14 to 16 minutes until the egg sheet reaches 160°F, then cut it into six rectangles.
  3. Cool the egg completely and pat the ham dry.
  4. Fill each croissant with 2 ounces ham, one egg rectangle and one Swiss slice.
  5. Wrap individually in parchment and foil and freeze for up to 1 month.
  6. Thaw overnight, remove the foil and bake at 325°F for 15 minutes until the center reaches 165°F.
