Four-Ingredient Salsa Verde Beef Tacos

This is one of the rare four-ingredient dinners that doesn't taste like a stunt. Salsa verde brings acid, chile and seasoning while onion melts into the beef juices. Warm the tortillas properly; cold corn tortillas split before the first bite.

Ingredients
  

  • 3 lbs boneless beef chuck roast
  • 2 cups jarred salsa verde
  • 1 large white onion thinly sliced
  • 16 corn tortillas

Method
 

  1. Place the sliced onion in a 6-quart slow cooker and set the beef on top.
  2. Pour the salsa verde over the beef and turn the roast once to coat it.
  3. Cover and cook on low until the beef shreds easily, 7 1/2 to 8 hours.
  4. Transfer the beef to a board, discard large fat pockets and shred it with two forks.
  5. Skim the sauce, return the beef to the cooker and toss it through the onion and salsa for 10 minutes.
  6. Warm the tortillas in a dry skillet until flexible and lightly spotted, about 20 seconds per side.
  7. Fill each tortilla with drained salsa verde beef and serve two per person.
