Four-Ingredient Root Beer Pulled Pork

Root beer sounds gimmicky until it cooks down with pork shoulder and barbecue sauce. It leaves caramel notes, not a soda-fountain flavor. Drain before saucing or the pork turns soupy, and use a sauce with enough vinegar to keep the sweetness in line.

Ingredients
  

  • 4 lbs boneless pork shoulder cut into 3 pieces
  • 12 oz root beer
  • 1 large yellow onion sliced
  • 1 1/2 cups tangy barbecue sauce

Method
 

  1. Spread the onion in a 6-quart slow cooker and set the pork pieces on top.
  2. Pour the root beer around the pork, cover and cook on low until the meat shreds easily, 7 1/2 to 8 hours.
  3. Transfer the pork to a board and discard large fat pockets.
  4. Pour the cooking liquid and onion through a strainer, reserving 1/2 cup onion and discarding the liquid.
  5. Shred the pork and return it to the cooker with the reserved onion and barbecue sauce.
  6. Cover and cook on high until the sauce clings to the pork, 15 to 20 minutes.
