Five-Ingredient Ham, Potato and Cheddar Bake

Frozen diced potatoes make this a true dump-and-bake dinner, not a recipe pretending to be easy. Cream turns rich in the oven while the ham seasons the whole pan. Stir once midway so the potatoes at the center cook as quickly as the edges.

Ingredients
  

  • 1 bag 32 oz frozen diced potatoes, thawed
  • 2 cups diced fully cooked ham
  • 1 1/2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sliced scallions
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the oven to 375°F and grease a 9-by-13-inch baking dish.
  2. Combine the potatoes, ham, cream, 1 cup cheddar, half the scallions, salt and pepper in the dish.
  3. Cover tightly with foil and bake for 35 minutes.
  4. Uncover, stir from the center to the edges and scatter the remaining cheddar over the top.
  5. Bake uncovered for 25 to 35 minutes, until the potatoes are tender, the cream bubbles thickly around the edges and the center reaches 165°F.
  6. Rest for 10 minutes and add the remaining scallions before serving.
