Five Guys-Style Cajun Boardwalk Fries

A rinse and two trips through the oil create fries with fluffy centers and firm brown shells. Season while the surface still shines. The spice mix is assertive. Start with half and add more after tasting one fry.

Ingredients
  

  • 3 lbs russet potatoes
  • 8 cups peanut oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 1/2 tsp kosher salt

Method
 

  1. Cut the potatoes into 3/8-inch fries, rinse them under cold water, and dry them thoroughly.
  2. Mix the paprika, garlic powder, onion powder, oregano, cayenne and salt in a small bowl.
  3. Heat the oil to 325°F and fry the potatoes in 3 batches for 4 minutes until flexible and pale, then drain for 10 minutes.
  4. Raise the oil to 375°F and fry the potatoes again in batches for 2 to 4 minutes until brown and crisp.
  5. Transfer the fries to a large bowl while hot, add half the spice mix, toss and taste before adding more.
