Enchirito-Style Beef and Bean Rolls

This discontinued mashup sits between a burrito and an enchilada. Beef, beans and onion go inside a soft tortilla, while red sauce and cheddar melt over the top. Keep the filling modest so the rolls stay closed under the sauce.

Ingredients
  

  • 6 large flour tortillas
  • 1 1/2 cups prepared seasoned beef base
  • 1 1/2 cups warm refried beans
  • 1/2 cup finely diced white onion
  • 2 cups mild red enchilada sauce
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sliced black olives

Method
 

  1. Warm the tortillas, beef and beans, heating the filling to 165°F.
  2. Divide the beans, beef and onion among the tortillas.
  3. Fold in the sides, roll and set seam-side down in a baking dish.
  4. Pour the red sauce over the rolls and add cheddar.
  5. Bake at 375°F for 12 to 15 minutes until bubbling.
  6. Add black olives and rest for 5 minutes before serving.
