Easy Cherry Dump Cobbler

Canned tart cherries and dry cake mix make this the pantry version of cobbler. The layers are intentionally left unmixed so butter can soak into the powder and form a pebbly top. Spread every dry patch before baking and check the center at the end; pale floury islands need another drizzle of butter.

Ingredients
  

  • 3 cans 14.5 oz each tart cherries in water, drained
  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/2 cup reserved cherry liquid
  • 1/2 tsp almond extract
  • 1 box 15.25 oz yellow cake mix
  • 12 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 350°F and butter a 9-by-13-inch baking dish.
  2. Whisk the sugar, cornstarch, reserved cherry liquid and almond extract in the dish, then fold in the drained cherries.
  3. Sprinkle the dry cake mix evenly over the cherries and break up all large lumps.
  4. Drizzle the melted butter slowly across the entire surface, covering as much dry mix as possible without stirring.
  5. Bake for 48 to 52 minutes until the top is browned and cherry filling bubbles around the edges and through the center.
  6. Cool for 30 minutes before scooping so the filling is thick enough to hold beneath the crust.
