Diner Monte Cristo

A Monte Cristo should be crisp at the edges, custardy inside and clearly savory before the sugar arrives. Ham, turkey and Swiss sit between sturdy white bread, then the whole sandwich gets a quick egg dip and shallow griddle. Use a light hand with the powdered sugar.

Ingredients
  

  • 8 slices firm white sandwich bread
  • 8 oz sliced fully cooked ham
  • 8 oz sliced ready-to-eat turkey
  • 8 slices Swiss cheese
  • 2 tbsp Dijon mustard
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/4 tsp kosher salt
  • 3 tbsp unsalted butter
  • 2 tsp powdered sugar

Method
 

  1. Spread 4 bread slices with Dijon and layer each with Swiss, ham, turkey, another Swiss slice and a second piece of bread.
  2. Press the sandwiches gently and trim only any loose meat that extends beyond the bread.
  3. Whisk the eggs, milk and salt in a shallow dish until no streaks remain.
  4. Melt half the butter on a griddle over medium-low heat, dip 2 sandwiches quickly on both sides and place them on the griddle.
  5. Cook for 3 to 4 minutes per side until golden, the egg coating is set and the center reaches 165°F; repeat with the remaining butter and sandwiches.
  6. Dust each sandwich with 1/2 teaspoon powdered sugar, cut diagonally and serve hot.
