Diner Chicken Salad Club Sandwiches

This is the cold club for people who want crunch without another fried crust. Roasted chicken gets chopped and folded with celery, scallions and just enough mayo to hold, while bacon and tomato live on the second deck so their smoke and acidity remain distinct.

Ingredients
  

  • 1 1/4 lbs boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup finely diced celery
  • 1/4 cup thinly sliced scallions
  • 1 tbsp lemon juice
  • 8 slices bacon
  • 12 slices white sandwich bread
  • 8 leaves iceberg lettuce
  • 8 slices tomato about 1/4 inch thick

Method
 

  1. Heat the oven to 425°F, rub the chicken with olive oil, salt and black pepper and roast it for 18 to 22 minutes, until 165°F inside.
  2. Cool the chicken for 15 minutes, chop it into 1/2-inch pieces and fold it with mayonnaise, celery, scallions and lemon juice.
  3. Cook the bacon in a skillet over medium heat until crisp and drain it on a wire rack.
  4. Toast all 12 bread slices and lay out 3 slices for each sandwich.
  5. Build each lower deck with 1 toast, 1 lettuce leaf, 1 tomato slice and one-fourth of the chicken salad.
  6. Add the middle toast, then layer on 2 bacon slices, 1 tomato slice and 1 lettuce leaf.
  7. Close each club with the final toast, secure it with picks and cut it into halves.
