Diner Bottomless Mug Coffee

The bottomless diner mug depends on a medium roast, a slightly generous water ratio and a clean paper filter rather than flavored beans. Brew the whole batch at once and transfer it to a rinsed thermal carafe. That keeps a second cup hot without the scorched taste that develops when coffee sits on a burner.

Ingredients
  

  • 6 cups filtered water
  • 3/4 cup medium-roast ground coffee
  • Milk or half-and-half for serving
  • Granulated sugar for serving

Method
 

  1. Heat the filtered water to 195 to 205°F if using a manual brewer.
  2. Rinse a paper filter with hot water and discard the rinse water.
  3. Add the coffee, brew all 6 cups and stir the finished carafe once to combine its stronger and lighter layers.
  4. Pour into a prewarmed thermal carafe instead of leaving the coffee on a hot plate.
  5. Serve in sturdy mugs with milk and sugar available at the table.
