Denny's-Style Ham and Egg Griddle Melt

Part omelet and part grilled cheese, this one is built for a late breakfast. Cook the eggs as a thin folded sheet so they stay inside the bread. Medium-low heat gives the cheese time to melt before the outside gets too dark.

Ingredients
  

  • 8 large eggs
  • 2 tbsp whole milk
  • 1/2 tsp kosher salt
  • 1 tbsp unsalted butter
  • 8 slices sourdough bread
  • 8 slices deli ham
  • 4 slices American cheese
  • 4 slices Swiss cheese
  • 2 tbsp mayonnaise

Method
 

  1. Whisk the eggs, milk and salt until no streaks remain.
  2. Melt the butter in a nonstick skillet over medium-low heat and cook the eggs as a thin sheet, folding it into 4 bread-size rectangles when softly set.
  3. Lay 4 bread slices out and top each with ham, an egg rectangle, American cheese, Swiss cheese and another bread slice.
  4. Spread the outsides with mayonnaise and cook the sandwiches in a clean skillet over medium-low heat for 3 to 4 minutes per side.
  5. Remove each melt when both sides are evenly brown and the cheese has softened through the egg layer.
