Curried Chicken Salad on Raisin Bread

Curry powder, grapes and toasted almonds give chicken salad sweetness, warmth and crunch without burying the meat. Raisin bread makes that direction intentional. Cool the almonds before mixing, halve the grapes so they do not roll out and use lettuce as a moisture barrier for a sandwich that travels well.

Ingredients
  

  • 3 cups chopped cooked chicken
  • 1/2 cup mayonnaise
  • 1 1/2 tsp curry powder
  • 1 cup halved seedless grapes
  • 1/2 cup sliced almonds toasted and cooled
  • 1/2 tsp kosher salt
  • 8 slices raisin bread
  • 8 lettuce leaves dried

Method
 

  1. Fold the chicken, mayonnaise, curry powder, grapes, almonds and salt together without crushing the fruit.
  2. Cover and chill for 30 minutes.
  3. Lay dry lettuce over four raisin-bread slices.
  4. Divide the chicken salad across the lettuce and close with the remaining bread.
  5. Cut in half and refrigerate until serving.
