- Place the chicken, salt, onion, cumin, green chiles, beans, hominy and broth in a 6-quart crockpot.
- Cover immediately and cook on low for 6 to 6 1/2 hours, with no delayed start, until the chicken reaches 165°F.
- Transfer the chicken to a clean plate and shred it into bite-size pieces.
- Return the chicken, switch the crockpot off, and stir in the Monterey Jack by small handfuls until melted.
- Stir in the lime juice and let the chili stand uncovered for 10 minutes until slightly thickened.
