Crockpot White Bean Green Chile Chili

This pale vegetarian chili builds its flavor from roasted green chiles, cumin and soft white beans. A portion of the beans gets mashed at the end instead of relying on cream. It's calm enough for a mixed table, with lime available to sharpen each bowl.

Ingredients
  

  • 45 oz canned cannellini beans drained
  • 1 cup diced yellow onion
  • 3 cloves garlic minced
  • 12 oz canned roasted diced green chiles
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups low-sodium vegetable broth
  • 1 1/2 tsp kosher salt
  • 1 cup frozen corn kernels
  • 2 tbsp fresh lime juice

Method
 

  1. Place the beans, onion, garlic, green chiles, cumin, coriander, broth and salt in a 6-quart crockpot.
  2. Cover and cook on low for 6 hours until the onion is soft and the beans are very tender.
  3. Mash 2 cups of beans against the side of the crockpot and stir them into the broth.
  4. Add the corn, cover and cook on high for 15 minutes until hot.
  5. Stir in the lime juice and rest uncovered for 10 minutes until the broth thickens.
