Crockpot Turkey Sweet Potato Chili

Turkey, sweet potato and red beans make a slow-cooker batch that is hearty without feeling greasy. Brown the turkey first and cut the potato into true half-inch pieces. Bigger cubes stay chalky long after the rest of the chili is ready.

Ingredients
  

  • 1 tbsp olive oil
  • 2 lbs ground turkey
  • 1 cup diced yellow onion
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 28 oz canned diced tomatoes
  • 30 oz canned red beans drained
  • 1 1/2 lbs sweet potatoes peeled and cut into 1/2-inch cubes
  • 2 cups low-sodium chicken broth
  • 1 1/2 tsp kosher salt

Method
 

  1. Heat the oil in a skillet over medium-high heat and cook the turkey and onion for 7 to 9 minutes until the meat reaches 165°F.
  2. Stir in the chili powder and cumin for 30 seconds.
  3. Transfer the mixture to a 6-quart crockpot and add the tomatoes, red beans, sweet potatoes, broth and salt.
  4. Cover and cook on low for 6 to 6 1/2 hours until the sweet potatoes are tender but retain their shape.
  5. Stir the chili and let it stand uncovered for 10 minutes to release excess steam.
