Cook the ground beef and onion in a large skillet over medium-high heat for 8 to 10 minutes, breaking the meat into small crumbles, until it reaches 160°F.
Drain the excess fat, then stir in the garlic, chile powder, cumin, oregano and tomato paste for 1 minute.
Transfer the beef mixture to a 6-quart crockpot and add the tomatoes, broth and salt.
Cover and cook on low for 6 to 7 hours until the flavors meld and the chili thickens around the crumbles.
Stir in the vinegar, leave the lid off for 10 minutes, and adjust the consistency with 1/4 cup water only if it is tighter than gravy.
