Crockpot Green Chile Chicken Queso Bowls

Rotisserie chicken warms in green chiles, beans and a loose queso that stays spoonable instead of setting like dip. The slow cooker is doing hot holding here, not pretending to cook raw poultry in half an hour. Total time: 45 minutes.

Ingredients
  

  • 4 cups shredded fully cooked rotisserie chicken
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 can 10 oz diced tomatoes with green chiles
  • 1 cup hot low-sodium chicken broth
  • 6 oz cream cheese cubed
  • 1 cup shredded pepper Jack cheese
  • 1 tsp ground cumin

Method
 

  1. Preheat a 4-quart slow cooker on high for 10 minutes while heating the broth until steaming.
  2. Add the hot broth, tomatoes, beans, cream cheese and cumin, cover and cook on high for 10 minutes.
  3. Stir until the cream cheese is smooth, then fold in the fully cooked chicken and pepper Jack.
  4. Cover and cook on high for 15 minutes, stirring once, until the center reaches 165°F.
  5. Stir thoroughly and divide the thick, spoonable chicken mixture among four bowls.
