Crockpot Creamy Chicken and Wild Rice

Cooked wild rice keeps this comforting crockpot dinner inside the weeknight limit and holds its texture better than instant rice. Hot broth and rotisserie chicken make the warm-through safe and believable. Total time: 40 minutes.

Ingredients
  

  • 4 cups chopped fully cooked rotisserie chicken
  • 3 cups fully cooked wild rice blend
  • 3 cups hot low-sodium chicken broth
  • 1 cup frozen peas and carrots thawed
  • 1 tsp dried thyme
  • 4 oz cream cheese cubed
  • 1/2 cup finely grated Parmesan cheese

Method
 

  1. Preheat a 4-quart slow cooker on high for 10 minutes while heating the broth until steaming.
  2. Whisk the hot broth with cream cheese in the cooker until mostly smooth, then stir in the thyme.
  3. Fold in the fully cooked chicken, cooked wild rice and thawed vegetables.
  4. Cover and cook on high for 15 to 20 minutes, stirring once, until the center reaches 165°F.
  5. Stir in the Parmesan and serve once the mixture is creamy but the rice grains remain distinct.
