Crockpot BBQ Chicken and Baked Beans

Fully cooked chicken and canned beans turn into a smoky, sticky bowl without an all-day wait. Use hot sauce and a preheated cooker; a cold crock is too slow for this timetable. Total time: 43 minutes.

Ingredients
  

  • 4 cups chopped fully cooked rotisserie chicken
  • 2 cans 15 oz each navy beans, drained and rinsed
  • 1 1/2 cups hot thick barbecue sauce
  • 1/2 cup hot low-sodium chicken broth
  • 1 tbsp yellow mustard
  • 1 tsp smoked paprika
  • 1/2 cup diced red onion

Method
 

  1. Preheat a 4-quart slow cooker on high for 10 minutes while heating the barbecue sauce and broth until steaming.
  2. Stir the hot sauce mixture, mustard and smoked paprika in the cooker.
  3. Add the beans, fully cooked chicken and red onion and stir until evenly coated.
  4. Cover and cook on high for 20 to 25 minutes, stirring once, until the center reaches 165°F.
  5. Stir again and serve when the sauce clings thickly to the chicken and beans.
