Cranberry Apple Cobbler

Frozen cranberries are ideal because they keep their shape while the fresh apples soften around them. Their sharpness needs more sugar than most cobblers, but orange zest keeps that sweetness from feeling heavy. The red berries burst through a pale biscuit topping and make this a strong cold-weather dessert.

Ingredients
  

  • 6 cups peeled 1/3-inch fresh apple slices
  • 2 cups frozen cranberries
  • 1 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tsp finely grated orange zest
  • 1/4 tsp kosher salt
  • 1 3/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 6 tbsp cold unsalted butter cubed
  • 3/4 cup buttermilk

Method
 

  1. Heat the oven to 375°F and butter a 9-by-13-inch baking dish.
  2. Toss the apples and frozen cranberries with 1 cup sugar, cornstarch, orange zest and 1/4 teaspoon salt.
  3. Spread the fruit in the dish and bake for 12 minutes.
  4. Whisk the flour, 1/3 cup sugar, baking powder and 1/2 teaspoon salt; cut in the butter and stir in the buttermilk.
  5. Drop the dough over the hot filling in nine rough mounds.
  6. Bake for 34 to 38 minutes until the biscuits are golden, the apples are tender and the center bubbles; cool 30 minutes.
