Country-Fried Sirloin with Cream Gravy

Cube steaks make this diner plate possible without an hour of pounding. A double dip builds the rough coating, while a brief fry keeps the beef from turning tough. Pour gravy over only part of each steak so some crust survives the trip to the table.

Ingredients
  

  • 4 beef cube steaks 5 oz each
  • 1 1/2 cups all-purpose flour divided
  • 1 1/2 tsp kosher salt
  • 1 tsp coarse black pepper divided
  • 1/2 tsp garlic powder
  • 1 cup buttermilk
  • 1 large egg
  • 2 cups vegetable oil for shallow frying
  • 2 tbsp unsalted butter
  • 2 cups whole milk

Method
 

  1. Combine 1 1/4 cups flour, salt, 1/2 teaspoon pepper and garlic powder in a shallow dish, then whisk the buttermilk and egg in a second dish.
  2. Coat each cube steak in flour, dip it in buttermilk and press it into flour again, then rest the coated steaks on a rack for 10 minutes.
  3. Heat 1/2 inch vegetable oil in a heavy skillet to 350°F.
  4. Fry 2 steaks at a time for 3 to 4 minutes per side, maintaining at least 325°F, until crisp and the centers reach at least 145°F.
  5. Drain the steaks on a clean wire rack and rest them for at least 3 minutes, then carefully discard the oil.
  6. Melt the butter over medium heat, whisk in the remaining 1/4 cup flour and cook for 1 minute.
  7. Whisk in the milk gradually, add the remaining pepper and simmer for 4 to 6 minutes until smooth and spoon-coating.
  8. Spoon the hot cream gravy over one side of each fried steak and serve promptly.
