Costco Deli-Inspired Five-Cheese Mac

A wide five-cheese blend and browned baked surface distinguish this Costco deli-inspired tray. Cheddar and Monterey Jack make the base, while Fontina, Parmesan and Romano add depth without one cheese dominating. The sauce goes into the oven slightly loose because a large pan keeps absorbing as it rests.

Ingredients
  

  • 1 1/2 lb cavatappi
  • 5 tbsp unsalted butter
  • 5 tbsp all-purpose flour
  • 5 cups whole milk
  • 2 cups shredded sharp cheddar divided
  • 2 cups shredded Monterey Jack
  • 1 cup shredded Fontina
  • 1/2 cup grated Parmesan
  • 1/2 cup grated Romano
  • 1 1/2 tsp kosher salt

Method
 

  1. Heat the oven to 375°F and boil cavatappi 2 minutes short of tender; reserve pasta water and drain.
  2. Melt butter, whisk in flour for 1 minute and gradually add milk; simmer until lightly thickened.
  3. Remove from heat and melt in 1 1/2 cups cheddar, Monterey Jack, Fontina, Parmesan, Romano and salt.
  4. Fold in pasta with enough reserved water for a loose sauce and spread in a buttered 9-by-13-inch dish.
  5. Top with remaining cheddar and bake 22 to 26 minutes until browned and bubbling.
