Coffeehouse Café Latte

A café latte is mostly steamed milk, so fresh beans cannot rescue milk that has been boiled. Strong espresso or moka-pot coffee gives the drink its backbone. Heat the milk only until steaming, then aerate it just enough for a thin cap of fine foam rather than the dry mound used for cappuccino.

Ingredients
  

  • 2 shots espresso or 1/3 cup strong moka-pot coffee
  • 3/4 cup whole milk
  • 1 tsp sugar optional

Method
 

  1. Brew the espresso into a 12-ounce heatproof mug and stir in sugar if using.
  2. Heat the milk in a small saucepan to 145 to 150°F without simmering.
  3. Froth with a handheld frother for 15 to 20 seconds, keeping most of the milk fluid.
  4. Pour the milk into the coffee while holding back the foam, then spoon the thin foam cap over the top.
