Classic School Sloppy Joes

The school-lunch sloppy joe is mild, thick and scoopable, not a loose restaurant sandwich that runs down both wrists. One five-quart pot makes eight sandwiches. Finely chopped onion disappears into the beef, ketchup supplies familiar sweetness and a short uncovered simmer reduces the filling enough to stay on plain soft buns.

Ingredients
  

  • 2 lb lean ground beef
  • 1 small yellow onion very finely diced
  • 1 cup ketchup
  • 1 can 8 oz tomato sauce
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp kosher salt
  • 8 soft hamburger buns

Method
 

  1. Brown beef and onion in a Dutch oven, breaking the beef into fine crumbles, and drain excess fat.
  2. Stir in ketchup, tomato sauce, brown sugar, mustard, Worcestershire, chili powder and salt.
  3. Simmer uncovered over low heat for 15 minutes, stirring often, until thick enough to mound.
  4. Warm the buns in a 300°F oven for 4 minutes.
  5. Spoon about 2/3 cup filling onto each bottom bun and close the sandwiches.
