Classic Dry Cappuccino

Equal visual layers distinguish this cappuccino: concentrated coffee, hot milk and a substantial cap of dry foam. Whole milk makes the most stable home froth, although two percent also works. Spoon foam rather than pouring all of it, and serve at once because a tall cap naturally settles as its bubbles drain.

Ingredients
  

  • 2 shots espresso or 1/3 cup strong coffee
  • 2/3 cup whole milk
  • Ground cinnamon optional

Method
 

  1. Brew the coffee into a prewarmed 8-ounce cup.
  2. Heat the milk to 145 to 150°F without letting it simmer.
  3. Froth vigorously until the milk nearly doubles in volume and holds fine bubbles.
  4. Pour about 1/3 cup hot milk into the coffee, then spoon a thick foam cap over it.
  5. Dust very lightly with cinnamon if desired and serve immediately.
