Cinnamon Twist-Style Duros

The airy texture comes from wheat pellet wheels, usually sold as duros—not pasta from the pantry. They puff in seconds, so fry only a few at a time and have the cinnamon sugar ready. Dark brown twists are already burned.

Ingredients
  

  • 4 oz dry wheat pellet wheels duros
  • 4 cups neutral oil
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp kosher salt

Method
 

  1. Mix the sugar, cinnamon and salt in a large paper bag or bowl.
  2. Heat the oil in a deep pot to 350°F.
  3. Add 6 to 8 duros and fry for 10 to 15 seconds until fully puffed but still pale.
  4. Lift them out immediately and drain for 10 seconds.
  5. Toss the hot twists in the cinnamon sugar.
  6. Repeat in small batches and cool completely before storing.
