Cinnabon-Style Gooey Cinnamon Rolls

These aim for a soft center, a dark cinnamon spiral and frosting that melts into the warm ridges. Use dental floss for clean cuts and bake only until the center roll is set; dry rolls cannot be rescued with icing.

Ingredients
  

  • 1 cup warm whole milk
  • 2 1/4 tsp active dry yeast
  • 1/3 cup granulated sugar
  • 1 large egg
  • 6 tbsp melted unsalted butter
  • 4 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 cup packed brown sugar
  • 2 tbsp ground cinnamon
  • 4 tbsp softened unsalted butter
  • 4 oz cream cheese
  • 1 cup powdered sugar

Method
 

  1. Stir the milk, yeast and 1 tablespoon sugar together and wait 7 minutes until foamy.
  2. Knead in the remaining sugar, egg, melted butter, flour and salt for 8 minutes, then cover and rise until doubled, about 70 minutes.
  3. Roll the dough into a 16-by-12-inch rectangle, spread with softened butter, and cover evenly with the brown sugar and cinnamon.
  4. Roll from a long edge, cut into 12 pieces, arrange in a greased pan, and rise for 35 minutes until puffy.
  5. Bake at 350°F for 22 to 25 minutes until the center reaches 190°F, then beat the cream cheese with powdered sugar and spread it over the rolls after 10 minutes of cooling.
