Chocolate-Cherry Baked Alaska

Baked Alaska is ridiculous in the most useful way: ice cream goes into a hot oven protected by a thick coat of meringue. Freeze every layer hard and seal the meringue to the cake with no gaps. It deserves an occasional comeback because the reveal still gets a reaction.

Ingredients
  

  • 1 round chocolate cake layer 9 inches
  • 1 1/2 quarts cherry ice cream slightly softened
  • 5 large egg whites
  • 1/2 tsp cream of tartar
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt

Method
 

  1. Line a 9-inch bowl with plastic wrap, press the softened ice cream into it and freeze for at least 4 hours until solid.
  2. Trim the cake into a 9-inch circle, invert the frozen ice cream dome onto it and remove the plastic wrap.
  3. Freeze the assembled cake and ice cream for 1 hour while heating the oven to 500°F.
  4. Beat the egg whites, cream of tartar and salt to soft peaks, add the sugar gradually and beat to stiff glossy peaks; beat in the vanilla.
  5. Cover the ice cream and cake completely with a thick continuous layer of meringue and bake for 3 to 5 minutes until browned, then slice immediately.
