Chipotle-Style Cilantro Lime Rice

Fluffy grains and a sharp lime finish make this simple rice more useful than its short ingredient list suggests. Rinse until the water is nearly clear, keep the lid down during the rest, and fold the herbs in gently so you do not mash the grains.

Ingredients
  

  • 2 cups long-grain white rice
  • 2 1/2 cups water
  • 1 tbsp neutral oil
  • 1 tsp kosher salt
  • 2 tbsp fresh lime juice
  • 1 tsp finely grated lime zest
  • 1/2 cup chopped cilantro

Method
 

  1. Rinse the rice under cool water for 2 minutes until the runoff is nearly clear, then drain it thoroughly.
  2. Combine the rice, water, oil and salt in a saucepan and bring it to a boil.
  3. Cover, reduce the heat to low and cook for 15 minutes without lifting the lid.
  4. Remove the pan from the heat and let it stand covered for 10 minutes.
  5. Fluff with a fork, then fold in the lime juice, zest and cilantro without pressing the grains together.
