Chili's-Style Skillet Queso

Processed cheese earns its place here because it stays fluid through the last chip. The browned beef turns a dip into something closer to a small meal. It will tighten as it sits. Loosen it with milk a tablespoon at a time.

Ingredients
  

  • 8 oz 90-percent lean ground beef
  • 1 tsp chili powder
  • 16 oz processed American cheese cubed
  • 10 oz canned diced tomatoes with green chiles
  • 1/2 cup whole milk
  • 1/2 tsp ground cumin

Method
 

  1. Brown the beef in a 10-inch skillet over medium heat for 6 to 8 minutes, breaking it into tiny crumbles until it reaches 160°F.
  2. Drain the excess fat and stir the chili powder and cumin into the beef for 30 seconds.
  3. Lower the heat and add the cheese, tomatoes with their liquid and milk.
  4. Stir steadily for 5 to 7 minutes until the cheese is completely melted and the queso is smooth.
  5. Keep the skillet over the lowest heat and stir in 1 tablespoon milk if the queso stops flowing from the spoon.
