Chicken Sausage Tater Tot Casserole

This is unapologetic freezer-aisle food. The filling still has real vegetables and quick cheese sauce. Neat rows of tots are optional. Baking until their undersides crisp is not.

Ingredients
  

  • 1 tbsp olive oil
  • 12 oz fully cooked smoked chicken sausage sliced
  • 1 small yellow onion chopped
  • 1 red bell pepper chopped
  • 2 tbsp all-purpose flour
  • 2 cups whole milk warmed
  • 1 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 2 cups chopped cooked chicken
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 bag 28 oz frozen tater tots

Method
 

  1. Heat the oven to 400°F and grease a 9-by-13-inch baking dish.
  2. Brown the sausage in the olive oil for 4 minutes, then add the onion and bell pepper and cook until softened.
  3. Stir in the flour for 1 minute, whisk in the warm milk and simmer until thickened.
  4. Add the mustard, salt, cooked chicken and cheddar and spread the filling in the baking dish.
  5. Arrange the frozen tater tots in one layer over the filling.
  6. Bake until the filling bubbles and the tots are deep golden and crisp, 35 to 40 minutes.
