Chicken Power Bowl

A power bowl should keep every component distinct instead of becoming a burrito without the tortilla. Season the chicken simply, drain the beans and cool the rice slightly before building. Sour cream and avocado add richness without a cheese sauce.

Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 1 tbsp neutral oil
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 3 cups cooked seasoned rice
  • 1 can black beans 15 oz, drained
  • 2 cups shredded romaine lettuce
  • 1 medium tomato diced
  • 1 avocado diced
  • 1/2 cup sour cream

Method
 

  1. Season the chicken with salt, cumin and chili powder.
  2. Heat the oil in a skillet and cook the chicken for 5 to 6 minutes per side until 165°F.
  3. Rest for 3 minutes and dice the chicken.
  4. Divide the warm rice and drained black beans among four bowls.
  5. Arrange chicken, lettuce, tomato and avocado in separate sections.
  6. Add 2 tablespoons sour cream to each bowl and serve.
