Chicken Parmesan Melts

Thin pan-seared chicken, marinara and mozzarella make a crisp-edged sub without a breading station. Broil the open sandwiches and watch them closely; melted cheese turns black in seconds. Total time: 35 minutes.

Ingredients
  

  • 4 boneless skinless chicken breast cutlets about 4 oz each
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 4 sub rolls split
  • 1 cup thick marinara sauce
  • 8 slices mozzarella cheese
  • 1/3 cup finely grated Parmesan cheese

Method
 

  1. Season the chicken with salt, black pepper and Italian seasoning and heat the olive oil in a large skillet over medium-high heat.
  2. Cook the cutlets for 3 to 4 minutes per side, until browned and 165°F inside, then rest them for 3 minutes.
  3. Place the split rolls on a sheet pan and fill each with 1 chicken cutlet and 1/4 cup marinara.
  4. Top each sandwich with 2 mozzarella slices and one-fourth of the Parmesan.
  5. Broil the open sandwiches for 2 to 3 minutes, until the rolls toast and the cheese bubbles, then close them.
