Combine the chicken, peppers, onion, garlic, chili powder, cumin, tomatoes, beans and salt in a freezer bag and freeze flat for up to 3 months.
Thaw the bag completely in the refrigerator for 24 to 36 hours; never thaw poultry on the counter.
Empty the mixture into a 6-quart crockpot, stir in the broth, and cook covered on low for 5 to 6 hours.
Check that the largest chicken pieces reach 165°F and break one open to make sure the center is opaque.
Stir in the lime juice and rest uncovered for 10 minutes so the peppers and beans stay distinct in the broth.
