Chicken Divan

Chicken Divan earns its place when the broccoli stays green and the curry keeps the sauce from tasting flat. Use cooked chicken and well-drained broccoli, because water hiding in the florets will thin everything out.

Ingredients
  

  • 4 cups chopped cooked chicken
  • 24 oz frozen broccoli florets thawed and patted dry
  • 2 cans 10 1/2 oz each condensed cream of chicken soup
  • 3/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp mild curry powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup fine dry bread crumbs
  • 3 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 350°F and butter a 9-by-13-inch baking dish with 1 teaspoon of the melted butter.
  2. Arrange the broccoli in an even layer and spread the cooked chicken over it.
  3. Whisk the soup, mayonnaise, lemon juice, curry powder, salt and pepper until smooth, then spoon it over the chicken.
  4. Sprinkle the cheddar evenly over the sauce.
  5. Mix the bread crumbs with the remaining melted butter and spread them over the cheese.
  6. Bake for 30 to 35 minutes, until browned, bubbling in the center and 165°F in the thickest part, then rest for 5 minutes.
