Method
- Heat the oven to 375°F and grease a 2 1/2-quart baking dish.
- Pat the roasted poblanos dry and layer half of them in the dish with half the cooked chicken and 3/4 cup Monterey Jack.
- Repeat the poblano, chicken and cheese layers.
- Whisk the eggs, milk, flour, cumin, salt and black pepper until smooth and pour the mixture over the layers.
- Top with the remaining cheese and bake until puffed and set in the center, 30 to 35 minutes.
- Warm the enchilada sauce and spoon 2 tablespoons over each serving.
