Chicken Burger with Avocado Lime Crema

A cool avocado-lime crema covers the ground chicken's biggest weakness: it can taste dry before it looks dry. Scallions and cumin season the patty from within. Use a thermometer and pull it as soon as the center reaches 165°F.

Ingredients
  

  • 1 ripe avocado
  • 1/3 cup sour cream
  • 2 tbsp lime juice
  • 1/4 tsp kosher salt
  • 1 1/2 lbs ground chicken
  • 3 scallions finely chopped
  • 1/3 cup panko breadcrumbs
  • 1 large egg beaten
  • 3/4 tsp kosher salt
  • 1 tsp ground cumin
  • 4 sesame hamburger buns
  • 4 leaves green-leaf lettuce
  • 4 slices tomato

Method
 

  1. Mash the avocado with the sour cream, lime juice and 1/4 teaspoon salt until mostly smooth, then press plastic wrap against the crema and chill it.
  2. Mix the chicken, scallions, panko, egg, remaining salt and cumin gently until combined.
  3. Shape 4 patties with wet hands and chill them for 10 minutes.
  4. Heat a lightly oiled nonstick skillet over medium and cook the patties for 6 to 7 minutes on the first side.
  5. Flip once and cook for 5 to 7 minutes more until the thickest centers reach 165°F.
  6. Toast the buns in the cleared skillet for 1 minute.
  7. Spread avocado crema over both halves, then build each burger with lettuce, tomato and one chicken patty.
