Chicken and Rolled Dumplings

Rolled dumplings are flat, tender strips, not fluffy biscuits floating on soup. The broth comes from simmering a whole chicken with a few vegetables, then the floury dumplings thicken it as they cook. Keep the pot at a gentle bubble or the strips can tear apart.

Ingredients
  

  • 1 whole chicken about 4 lbs
  • 10 cups water
  • 1 large yellow onion quartered
  • 2 carrots cut into 2-inch pieces
  • 2 celery ribs cut into 2-inch pieces
  • 2 1/2 tsp kosher salt divided
  • 1 tsp black pepper divided
  • 2 1/2 cups all-purpose flour plus 1/4 cup for rolling
  • 3 tbsp cold vegetable shortening
  • 3/4 cup whole milk

Method
 

  1. Place the chicken, water, onion, carrots, celery, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large pot and simmer gently for 70 to 80 minutes until the thigh reaches 165°F.
  2. Lift out the chicken, strain the broth, discard the spent vegetables, and return 8 cups of broth to the pot.
  3. Cool the chicken enough to handle, discard the skin and bones, and pull the meat into bite-size pieces.
  4. Cut the shortening into the 2 1/2 cups flour, remaining salt and pepper until crumbly, then stir in the milk to make a firm dough.
  5. Roll the dough 1/8 inch thick on a floured surface, cut it into 1-by-3-inch strips, and let the strips dry for 10 minutes.
  6. Bring the broth to a gentle boil, drop in the dumplings one at a time, and simmer uncovered for 15 minutes until tender and no raw flour remains.
  7. Fold in the chicken and heat for 5 minutes until it reaches 165°F and the broth lightly coats a spoon.
