Chick-fil-A-Style Chicken Noodle Soup

The distinct feature is a clear, chicken-forward broth with soft vegetables and broad egg noodles. Simmer bone-in thighs for flavor, then pull the meat and strain the broth before the noodles go in. That extra strain keeps the finished bowl clean.

Ingredients
  

  • 2 lbs bone-in chicken thighs
  • 8 cups low-sodium chicken broth
  • 1 large yellow onion quartered
  • 2 celery ribs divided
  • 3 carrots divided
  • 2 garlic cloves smashed
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 6 oz wide egg noodles
  • 1/2 tsp dried thyme

Method
 

  1. Combine the chicken, broth, onion, 1 celery rib, 1 carrot, garlic, salt and black pepper and bring to a gentle simmer.
  2. Cook partially covered for 35 to 40 minutes until the chicken reaches 165°F and pulls easily from the bone.
  3. Remove the chicken, strain the broth and discard the spent vegetables.
  4. Dice the remaining celery and carrots and simmer them in the strained broth with thyme for 10 minutes.
  5. Shred the chicken, add it with the egg noodles and simmer for 8 to 10 minutes until tender.
  6. Return the soup to 165°F and adjust the broth with up to 1 cup hot water if needed.
