Cherry Phosphate Soda

A phosphate is sharper and less candy-sweet than a modern flavored soda. Food-grade acid phosphate gives cherry syrup a dry citrus-like snap without adding lemon flavor. It is one of the fountain drinks genuinely worth reviving.

Ingredients
  

  • 3 tbsp cherry syrup
  • 1 tsp food-grade acid phosphate
  • 1 cup ice-cold plain seltzer
  • 1/2 cup ice cubes

Method
 

  1. Fill one tall soda glass halfway with the ice cubes.
  2. Pour the cherry syrup and acid phosphate over the ice.
  3. Add the cold seltzer slowly, stopping briefly if the foam approaches the rim.
  4. Stir from the bottom 3 times until the drink is evenly ruby-red without flattening all the bubbles.
  5. Serve immediately while the soda is sharply carbonated.
