Cherry Almond Crumble

A crumble is built from floury butter crumbs, and this one adds sliced almonds rather than oats. Frozen dark cherries work well because they are already pitted and remain plump in the oven. Almond extract is used sparingly so the pan tastes like cherries, not candy flavoring.

Ingredients
  

  • 7 cups frozen pitted dark cherries
  • 2/3 cup granulated sugar
  • 5 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/4 tsp almond extract
  • 1/4 tsp kosher salt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup packed light brown sugar
  • 1/2 tsp kosher salt
  • 10 tbsp cold unsalted butter cubed
  • 3/4 cup sliced almonds

Method
 

  1. Heat the oven to 375°F and butter a 3-quart baking dish.
  2. Toss the frozen cherries with granulated sugar, cornstarch, lemon juice, almond extract and 1/4 teaspoon salt.
  3. Spread the cherries evenly in the dish.
  4. Mix the flour, brown sugar and 1/2 teaspoon salt, then rub in the butter until large and small crumbs form.
  5. Fold the almonds into the crumbs and scatter the mixture over the fruit.
  6. Bake for 46 to 50 minutes until the almonds are golden and the center filling bubbles; rest 30 minutes.
