Cheeseburger Hawaiian Roll Sliders

Finely crumbled beef makes these easy to portion without cutting through one large burger patty. Cook it with chopped onion, drain it, then bind the crumbles with a small amount of ketchup and mustard. You want a beef filling that stays together, not a pan of loose grease. American cheese melts into the gaps, and pickle relish supplies the sharp burger-counter flavor without large slices sliding out of the sandwich.

Ingredients
  

  • 12 connected Hawaiian sweet rolls about 12 oz
  • 1 lb 90% lean ground beef
  • 1/2 cup finely chopped yellow onion
  • 1/4 tsp fine salt
  • 1/4 tsp black pepper
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp drained dill pickle relish
  • 6 oz American cheese sliced
  • 3 tbsp unsalted butter melted
  • 1 tsp sesame seeds

Method
 

  1. Heat the oven to 350°F. Cook beef and onion in a large skillet over medium-high heat for 8 to 10 minutes, breaking the meat into small crumbles, until the beef reaches 160°F. Drain excess fat.
  2. Stir in salt, pepper, ketchup, mustard and drained relish. Split the connected Hawaiian rolls horizontally and place the bottom slab in a parchment-lined 9-by-13-inch pan.
  3. Layer half the cheese over the bread, spread beef evenly and cover with remaining cheese and the top slab.
  4. Brush with melted butter, sprinkle with sesame seeds and cover loosely with foil. Bake for 15 minutes, then uncover for 8 to 10 minutes until the center reaches 165°F.
  5. Rest for 5 minutes, then cut into 12 sliders so the filling has time to settle.
