Cake Mix Christmas Cookies

Cake mix makes a useful soft cookie when the oven is already working through several other batches. Use the box size listed so the oil and egg ratio stays right. The dough should be thick enough to scoop, and the sprinkles belong in it rather than scattered across the counter. These are simple, cakey cookies that can fill out a tin without another chilling schedule.

Ingredients
  

  • 1 box white cake mix 15.25 oz
  • 2 large eggs
  • 1/3 cup neutral oil
  • 1 tsp vanilla extract
  • 1/4 cup red and green baking sprinkles

Method
 

  1. Heat the oven to 350°F and line two baking sheets with parchment. Put the dry cake mix in a large bowl and break up any lumps.
  2. Stir in eggs, oil and vanilla with a sturdy spoon until a thick dough forms, then fold in the sprinkles.
  3. Divide into 24 rounded portions and place 2 inches apart on the prepared sheets.
  4. Bake one sheet at a time for 9 to 10 minutes, until the edges are set and the tops no longer look wet; keep them pale for a soft texture.
  5. Cool on the sheets for 5 minutes, then transfer to racks and cool fully before packing.
