Cajun Chicken Penne

Small chicken pieces, penne and peppers cook in one spicy tomato-cream sauce. Keep the pot at a firm simmer and stir from the bottom; that's what makes a one-pot pasta work. Total time: 40 minutes.

Ingredients
  

  • 1 1/4 lbs boneless skinless chicken breasts cut into 3/4-inch pieces
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper diced
  • 12 oz dry penne pasta
  • 1 can 14.5 oz crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 cup finely grated Parmesan cheese

Method
 

  1. Toss the chicken with Cajun seasoning and heat the olive oil in a Dutch oven over medium-high heat.
  2. Cook the chicken for 5 to 6 minutes, until browned and 165°F inside, then transfer it to a clean plate.
  3. Add the bell pepper, penne, tomatoes and broth and bring the mixture to a boil.
  4. Simmer uncovered for 11 to 13 minutes, stirring often, until the penne is tender and the sauce has reduced.
  5. Lower the heat and stir in the chicken, cream and Parmesan until the sauce coats the pasta.
