Butter-Glazed Sweet Corn

Simple corn exposes every shortcut, so don't boil it into wrinkles. A covered skillet steams the kernels in their own moisture, then butter and a pinch of sugar make them glossy. Five minutes is enough for frozen corn; beyond that it gets chewy.

Ingredients
  

  • 24 oz frozen sweet corn kernels
  • 3 tbsp water
  • 3 tbsp unsalted butter
  • 1 tsp granulated sugar
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Put the frozen corn and water in a large skillet, cover and set it over medium-high heat.
  2. Steam until the kernels are hot and bright yellow, 4 to 5 minutes, shaking the skillet once.
  3. Uncover and cook until any water at the bottom evaporates, about 1 minute.
  4. Add the butter, sugar, salt and pepper and toss until every kernel looks glossy, 1 to 2 minutes.
  5. Remove the skillet from the heat while the corn still has a little pop when bitten and serve at once.
