Buffalo Chicken Blue Cheese Crumb Bake

Buffalo sauce, chicken and white beans make a tangy filling under a blue-cheese panko crust. The beans mellow the heat and stretch the chicken without adding pasta. Blue cheese is measured into the crumbs, where its sharp flavor survives instead of dissolving into an indistinct sauce.

Ingredients
  

  • 4 cups cooked shredded chicken
  • 2 cans cannellini beans 15 ounces each, rinsed
  • 1 cup Buffalo-style hot sauce
  • 8 ounces cream cheese softened
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 cup panko bread crumbs
  • 5 ounces blue cheese crumbled
  • 3 tablespoons melted butter

Method
 

  1. Heat the oven to 375°F and grease a 9-by-13-inch dish.
  2. Whisk hot sauce, cream cheese, milk, garlic powder and salt until smooth.
  3. Fold in chicken and beans and spread in the dish.
  4. Mix panko, blue cheese and melted butter and sprinkle evenly over the filling.
  5. Bake for 25 to 30 minutes until bubbling and golden. Rest 10 minutes.
