Brownie Ice Cream Dessert Sliders

Brownie squares make a better frozen slider than cookies because they stay chewy at low temperature. Slice them thin, use one modest scoop of vanilla and freeze the assembled sandwiches until firm. A pinch of salt keeps the whole thing from tasting flat.

Ingredients
  

  • 1 box brownie mix 18 oz
  • 2 large eggs
  • 1/2 cup neutral oil
  • 1/4 cup water
  • 3 cups vanilla ice cream softened
  • 1/2 tsp flaky salt

Method
 

  1. Mix the brownie mix, eggs, oil and water until no dry pockets remain.
  2. Spread the batter in a parchment-lined 9-by-13-inch pan and bake at 350°F for 22 to 25 minutes until the center reaches 160°F and a tester has moist crumbs.
  3. Cool completely, chill for 30 minutes and cut into 16 equal rectangles.
  4. Spread 3/8 cup softened ice cream over eight brownie rectangles.
  5. Top with the remaining brownies and a small pinch of flaky salt.
  6. Freeze for 1 hour until firm and serve straight from the freezer.
