Brown-Sugar Glazed Pork Chops

Thick pork chops take well to a sweet-savory glaze as long as it goes on late. Brown sugar burns if it spends the entire cook in the skillet. Sear first, finish gently, then reduce the glaze until it clings in a thin shiny layer.

Ingredients
  

  • 4 bone-in pork loin chops 8 oz each and 1 inch thick
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp neutral oil
  • 1/3 cup low-sodium chicken broth
  • 2 tbsp light brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

Method
 

  1. Pat the pork chops dry and season both sides with the salt and pepper.
  2. Heat the oil in a heavy skillet over medium-high heat and sear the chops for 3 minutes per side until brown.
  3. Lower the heat to medium-low, cover and cook for 4 to 7 minutes until the thickest part reaches 145°F away from the bone.
  4. Move the chops to a plate and rest them for at least 3 minutes.
  5. Whisk the broth, brown sugar, mustard and vinegar into the skillet and scrape up the browned bits.
  6. Simmer for 3 to 4 minutes until the glaze is syrupy, then turn the rested chops through it once and serve.
